This honor goes to Chuck Draghi and Joan Johnson, who
ended a long hiatus from cheffing and managing to open Erbaluce (69 Church Street, Boston, 617.426.6969). Draghi’s take on Northern Italian food (which substitutes
vegetable essences for animal fats) and Johnson’s list of exotic Italian wines
are both unique, adding up to the most idiosyncratic and original Italian
restaurant in the city. We’re elated they finally found their way home.
