Perfect Ten

We're perpetually hungry (er, thirsty?) for the scoop on the latest and greatest cocktails in Boston, but this one stopped us in our tracks. Our current liquid obsession comes from the bar at swank new nightspot STIX (35 Stanhope Street, Boston, 617.456.STIX). The Ten Cane Raspberry Sashimi ($15) is the brainchild of beverage director Paul Westerkamp. Served in a bento box, it's made with Ten Cane rum that is - get this - gelatinized using a Boiron raspberry purée to give it that "sashimi" look. You serve yourself using a pair of chopsticks, and the taste is akin to a raspberry-lime rickey. The box is stocked with lime juice (standing in for soy sauce) and, in place of wasabi, two flavored sugars: lime and raspberry. Too tipsy for chopsticks? The drink also comes with tuile cookies for scooping and serving.

You make it sound like gelatinized alcohol is something new. Frat boys have been doing it for ages.
