Somehow he finds time to do it all, including spending time with his family, particularly his son, David. The young Tsai has a severe peanut allergy. Imagine that - your dad is famous for his Asian cuisine, and you can't eat peanuts! Tough break, kid. Thankfully, his dad is fully committed to serving up food safely for people with allergies and dietary restrictions. His sticky rice stuffing (a recipe Tsai got from his mom) is a delish gluten-free option that will have the celiac diner feeling anything but deprived. Because really, what is Thanksgiving without stuffing? Thank you Ming - and thank you Ming's mom!

Ready to get cooking? And no, we're not referring to his work at Bambara (25 Edwin H. Land Boulevard, Cambridge, 617.868.4444), which mostly caters to hungry tourists staying at Hotel Marlowe. Silva grew up as one of 10 children, so cooking during the holidays was always a team effort. "Thanksgiving was a huge event. We would have 30-40 people come by. The stuffing was the headliner." Using his fond childhood memories for inspiration, Silva recreated his dad's famous stuffing for his extended family here at STUFF (hey, we could well be, like, 12th cousins twice removed). This dish will not be available on his menu, so study up ... or maybe you can convince Silva to let you tag along with him for the holidays.

Ready to get cooking? We love that fire-red hair! But what we love most about the beloved chef is her ability to please the most sophisticated of palates while introducing new flavors in a way that's approachable for more traditional eaters. Her creation - which is already on the menu at her restaurant Blue Sky in Maine - is slated to make its way to Scampo (215 Charles Street, Boston, 617.536.2100) this winter. Until then, you can attempt to make it at home; Shire is pretty sure you can handle it. "Soufflés are deal breakers for some due to fear of failure.... Duarte's flair for international fusion is apparent in this dish, which will be featured as an appetizer special during Thanksgiving week. "The use of lucuma fruit was elemental as it has a very particular 'pumpkin mocha' flavor, and it will fit right in with Thanksgiving." If you're going to try this at home, good luck finding lucuma, a subtropical Peruvian fruit that tastes like a sweet potato covered in maple syrup.
